1 cup Vegan life Ready-made pancake mix
1 cup vegetable milk of your choice
2 tablespoons frozen or fresh blueberries
Lemon zest
Fresh blueberries for garnish

Instructions

In a bowl, stir the Vegan Life pancake mix together with the vegetable milk of your choice.

Add the zest of one lemon, being careful not to grate the white part as it is bitter.

Add the frozen blueberries and stir gently.

Place your frying pan over medium-low heat, lightly grease and pour the batter into the pan, you can make them as big or small as you like. Wait for it to cook down for about 3 to 4 minutes.

Using a flexible kitchen spatula, turn them over and allow them to finish cooking and brown.
Serve immediately with fresh cranberries and a berry sauce.
